Muffins/loaf

This recipe can be changed to many flavours. In class we did blueberries or chocolate chips and in the second picture I did apples with spices.


Muffin recipe (or loaf)


This recipe will make one loaf or 6 bakery style muffins and can easily double, triple or quadruple to make more!


1 cup flour

1/3 cup sugar

1 1/4 tsp baking powder

1/8 tsp salt

1/4 cup milk

1/4 cup oil

1 egg

1/2 cup add ins (any fresh fruit, dried fruit, chocolate, nuts, or seeds)


Preheat oven to 425. Mix the dry ingredients separate from the wet, then mix just until combined. Stir in add ins. Scoop into desired pan. Top with streusel topping if you like.


Streusel topping

3 Tbsp butter

1/2 tsp cinnamon

1/6 cup brown sugar

1/3 cup flour

Combine and put on top of muffins or loaf.

Bake muffins at 425 for 5 min, then 22-25 min if in a loaf pan or 12-15 min if in a muffin tin. Toothpick should come out clean.
