Jamaican Jerk Chicken Tacos

Updated: Sep 28, 2020

I start off my marinading 4 chicken breasts in Grace brand name Jamaican style jerk marinade for 2 days, just enough sauce to coat the chicken is sufficient. You can also make the jerk seasoning ahead of time for easy prep on cooking day.

Jerk seasoning

1 Tbsp dried onion flakes

1 Tbsp garlic powder

1 Tbsp parsley

2 tsp cayenne

2 tsp paprika

2 tsp salt

1 tsp allspice

1 tsp black pepper

1 tsp thyme

1/2 tsp red pepper flakes

1/2 tsp cumin

1/2 tsp nutmeg

1/2 tsp cinnamon

Mix together and sprinkle on chicken as desired after their fully cooked.

Pineapple Salsa (what I would use)

Pineapple, diced (1 cup)

Tomato, diced (1/3 cup)

Red onion, minced (2 Tbsp)

Salt & Pepper to taste

Mix ingredients in a bowl, adding more or less of any item.

Creamy Jerk Sauce

2 Tbsp Coconut milk

2 Tbsp Plain yogurt

1 Tbsp Grace mild Jerk Seasoning

Scotch Bonnet sauce (optional, adds a lot of heat!)

Mix together and add more of any item to make to your liking.

Other ingredients

Purple Cabbage, shredded

Flour or corn tortillas

Putting it all together

Cook your chicken with the marinade on (I like to cook my chicken in my instant pot), until fully cooked. Place chicken on tortilla, sprinkle jerk seasoning and cabbage on top. Scoop on pineapple salsa and creamy jerk sauce and enjoy!
